Mediterranean Burgers

Mediterranean Burgers over Mixed Greens with Roasted Red Peppers
serves 4

1 pound ground lean turkey meat
1/4 cup chopped pitted kalamata olives (bite-size chunks)
2 teaspoons dried oregano
1/4 cup chopped white cheddar or feta cheese
Salt and pepper to taste (cheese and olives are salty, so go light on the salt)
4 slices of roasted red peppers

Mix all ingredients in bowl, and form into 4 patties. Heat grill pan to medium high heat, and lightly coat in garlic olive oil. Grill each side for about 4-5 minutes, or until cooked through. Garnish with lemon mayo, and sliced roasted red peppers. 

Lemon Aioli:
4 tablespoon mayo
1/4 lemon (about 1 tablespoon)
1/2 tsp. garlic powder


Mixed Green Salad with Lemon and Garlic Dressing
serves 6-8

One box mixed greens 
1/2 cup good quality olive oil
juice of 2 lemons
2 garlic cloves minced or crushed
1 teaspoon kosher salt

Toss half of dressing with mixed greens in large mixing bowl. Add dressing until lettuce leaves are lightly coated. 

-Bread optional. This meal is delicious served over a bed of green, or on a toasted sourdough roll.
